Ingredients
2 eggs, separated
1 ½ cups all-purpose flour
¼ cup white sugar
2 teaspoons baking powder
½ teaspoon baking soda
1 ¼ cups buttermilk
¼ cup melted butter
½ teaspoon vanilla extract
Directions
Step 1 Beat egg whites in a glass, metal, or ceramic bowl until stiff peaks form.
Step 2 Butter enough 3 1/2-inch ring molds to fill your frying pan. Place molds in the pan over low heat. Cover.
Step 3 Mix flour, sugar, baking powder, and baking soda in a bowl.
Step 4 Combine buttermilk, egg yolks, butter, and vanilla extract in a separate bowl. Add the flour mixture and stir until the batter is fairly smooth.
Step 5 Fold egg whites into the batter until combined. Small bits of egg whites still showing are OK.
Step 6 Pour about 1/2 cup of batter into each mold and cover the pan. Cook until bubbles start forming at the top, about 5 minutes. Flip pancakes in their molds and cook until set, 3 to 4 minutes more
Buttermilk Pancakes

This recipe is a one-person recipe, it yields 3-4 servings, and you will not believe such magic can happen in just 35 minutes.
Ingredients
2 c. all-purpose flour
2 1/2 Tbsp. granulated sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. kosher salt
2 1/2 c. buttermilk
2 eggs, separated
4 Tbsp. unsalted butter, melted, plus more for serving
Vegetable oil, for cooking
Maple syrup, for serving
Directions
Step 1 In a medium bowl whisk together flour, sugar, baking powder, baking soda, and salt. In another medium bowl, whisk together buttermilk and egg yolks. As you whisk, stream in the melted butter.
Step 2 In another bowl, using an electric mixer fitted with the whisk attachment, beat egg whites on high until stiff peaks form, 1 to 2 minutes. Fold the egg whites into the wet ingredients until just combined. Finally, spoon the wet ingredients over the dry and gently fold together until just combined (do not overmix). Some lumps are OK.
Step 3 Preheat a griddle or other heavy-bottomed skillet over medium heat until hot but not scorching, 2 to 3 minutes. Add about a teaspoon of oil then use a cloth or paper towel to rub it onto the cooking surface until you see no visible oil.
Step 4 Using a measuring cup, ladle as many heaping ⅓ cups of batter onto the griddle as you can fit, then use the bottom of the measuring cup to gently spread the batter into even circles.
Step 5 Cook pancakes until you see bubbles form on the top and the sides start to lift from the pan, 2 to 3 minutes. Flip the pancakes and cook until the bottom is golden, and the cake is fluffy, another 2 to 3 minutes. Transfer to a rack. Continue with the rest of the batter, wiping out the pan and adding more oil between batches.
Step 6 Serve the pancakes warm with butter and syrup.
Milk Free Pancake

Ingredients
1 cup white flour
3 tablespoons white sugar
2 1⁄4 teaspoons baking powder
1⁄4 teaspoon salt
2 1⁄2 tablespoons margarine
3⁄4 cup water
1 egg and 2 tablespoons water
Directions
Step 1 Sift flour, sugar, baking powder, and salt together into a medium mixing bowl.
Step 2 Melt 2 1/2 Tbsp margarine in a frying pan until melted. Be sure to tip the pan side to side to coat/grease all over.
Step 3 Pour melted margarine into a small bowl, add water and egg (if you want to add egg); Mix well.
Step 4 Stir the liquid mixture into the dry ingredients until it is thoroughly moistened. (It is OK if this batter is lumpy.)
Step 5 Cook the pancakes over medium-high heat on the stove-top (or 375F on electric frying pans). Cook pancakes until the tops are bubbly and the bottoms browned.
Step 6 Turn the pancakes over to cook the other side (approximately four minutes per side).
Serve hot with margarine, honey, brown sugar, or maple syrup.
