You’ve been seeing Nigerian Jollof rice everywhere on TikTok and want to taste it, but you have no Nigerian restaurants close to you. Or you just want to try to cook it yourself so your family can taste it without breaking the bank at some expensive eatery. Well, you’re in luck because here is the best and easiest recipe that is guaranteed to give you the tastiest jollof rice if you follow the instructions.

For this dish, you’ll need:
- Parboiled Rice
- Oil
- Butter
- Bay leaf
- Jollof rice spice
- Curry
- Thyme
- Tomato paste
- Fresh tomatoes and bell peppers
- Onions
- Ginger
- Garlic
- Chicken, Beef or Fish
- Salt
- Seasoning salt
- Paprika
Recipe for Nigerian Jollof rice

Step one
Rinse the rice till the water is clear, and then set that aside. Get your chicken or whatever protein you plan on using, and wash that. Boil some water In a kettle, and then get your ginger, garlic, tomatoes, and pepper and pop those in the oven on low- medium heat for 30 minutes to 1 hour
Step two
Make some incisions on your chicken. Then, marinate with paprika, salt, seasoning salt, grated ginger and garlic, and a little bit of oil. Set aside for 30 minutes overnight for all the ingredients to marinate properly. Once your chicken is marinated, you can add it to a pot with a little water and boil it for 20- 30 minutes on medium heat to cook.
Check on Occasionally to make sure the water doesn’t dry, and if it does, simply just add a little more as we will need the chicken stock for the jollof rice. Once the chicken is tender inside and out, take it off the heat and then into the air fryer for about 3 minutes to crisp up a little
Step three:
Your peppers should have roasted at this point, so bring them out of the oven and into a blender to blend them smoothly into a paste. Also, take your chicken out of the blender and set aside. Dice your onions into small or big chunks, depending on how you like them.
Step four:
Add oil and onions to caramelize in a nonstick pot over low heat for three minutes. Once this is done, increase the heat and add your tomato paste to fry for two minutes. When properly fried, the tomato paste will turn slightly darker, and then you add your pepper, tomato, ginger, and garlic paste to the pot to also fry.
Now add all your seasonings: paprika, salt, seasoning salt, thyme, curry, jollof rice spice, butter, and rosemary into the pot and stir for another two minutes.
Step five
Add the chicken stock you set aside previously into the pot and a little boiled water. Adding a little water at a time so the rice doesn’t get soggy. Add your bay leaves and then add your rice into the mixture and leave on medium heat for 30 minutes
After a while, check on it; add to it if it needs more water. Don’t worry if the rice burns a little; it gives it a smokey flavor. After at most 1 hour (depending on the quantity you’re making), the rice should be ready, and now you can take it off the pot and serve

Get some pepper and onions and dice them up. Get a small pan with some oil and put it over high heat. Once the oil is hot, add the pepper and onions into it and let that fry. Add your chicken from earlier and mix with the fried pepper, then you can switch off the heat. You can add honey to sweeten it.
You can serve your rice and chicken with some fried plantains and a cold drink. You can also pair it with fried rice to get the ultimate combination of flavors in your mouth. Another thing to pair your jollof rice with is some coleslaw or a simple salad.
