They say breakfast is the most important meal of the day. Whether you follow that philosophy or not, breakfast is delicious no matter what time of day you eat it. Spring is the perfect time of year to renew your love of breakfast foods and with these Spring inspired breakfast ideas, you might just decide to whip one of these great recipes up tomorrow morning.
What inspires Springtime recipes?

Is seasonal eating part of your lifestyle? Getting ingredients that are in season at the peak of their vigor and flavor is my favorite way to cook and plan meals. When the seasons change, and the opportunity arises to add fresh and abundant produce to my weekly menus, I get excited to spring into these recipes.
In the Spring, I think about greens, fruits, herbs, eggs, honey and early grains, like oats, barley, and some varieties of wheat. These foods inspire me to break away from the heavier winter pallet of stews and warming curries or chili and treat myself to the lighter fresher fare of the season. Whether your favorite breakfast is a warm plate of eggs, a cooling smoothie or a comforting bowl of oatmeal, you will find something to entice your morning cravings.
Spring Recipes You Will Love!
Eggs two ways:
Scrambled eggs with fresh herbs, soft cheese like Boursin, and green onions or baby spinach are a family favorite in our home. I like to add everything right into the eggs after I’ve whipped them up in a bowl and pour it all into a pan to cook and melt together. Chop the cheese, herbs, and veggies into bitesize pieces for a more uniform texture. Other good additions to these eggs are mushrooms, tomatoes, or peppers. I like mine on top of my toast, smeared with jam and a drizzle of hot sauce.
Egg salad sandwiches made with hard boiled eggs and the cheese and veggies suggested above are also a great way to start your morning. In this case, I like to line my bread with fresh baby spinach, tomatoes, and green onions, while I mix the Boursin cheese into the chopped eggs with some avocado in place of the typical mayo. Don’t forget the salt and pepper!
Cucumbers, salad or sandwich?
I’m a sucker for a traditional cucumber sandwich. I love the soft luxury of plain Wonder bread with the crusts cut off here, but feel free to use a heartier grain or seed bread if that is your preference. The thin sliced version of Daves Killer Bread is outrageous with the cool crisp crunch of cucumbers. To make this sandwich, bring cream cheese to room temperature (I always forget so I pop some in the microwave for 20 or so seconds) add in a little mound of fresh chopped dill, and schmear your bread with it. Then add thinly sliced cucumbers (I prefer the English variety) and you’re done! Enjoy
Cucumber salad might even be easier. I like to cut my cucumbers in to thick half-moons for this salad. Again, I prefer the English variety, but use what you like. In a separate bowl, prepare the dressing, a heaping spoonful of sour cream or mayo, or both together if you like, mixed with a drizzle of red wine vinegar until you get the salad dressing consistency you like, another mound of fresh chopped dill and salt and pepper to taste. Combine the dressing with your cucumbers and you’ve got a light and refreshing salad to enjoy.
What About the Sweeter Side of Breakfast?

Fruit Smoothies:
Berries and chocolate go together so well and if you’re a chocolate lover at any time, here is a delicious guilt-free way to enjoy chocolate for breakfast. Any berry will work here, but my preference is a mixture of Strawberries and Blueberries with Cacao powder. This hydrating smoothie will tick all your chocolaty sweet boxes for breakfast. I prefer a non-daily milk here (I suggest oat milk) but use what you love. Simply add a handful or two of berries to a blender with a couple scoops of ice and a heaping tbsp of cacao power and whirr up a decadent breakfast.
Not a big chocolate fan? Thats ok. Tropical smoothies will hit the sweet spot for breakfast too. Here, I like to switch out the oat milk for coconut water. Bananas, pineapple, and papaya are my favorite options for tropical smoothies. Again, add the fruit and liquid to a blender with some ice and it’s as easy as that. These juicy fruits are available all year-round in the climates they come from, so why not enjoy them in the Spring?
Fruit as a topping:
Do you prefer your oatmeal hot or cold? Overnight oats are delicious for breakfast, but I have heard so many people say they don’t like cold oatmeal, so I am going to tell you a little secret…psss listen up: you can warm them up in the microwave if you prefer them hot. Now that we’ve cleared that up, let’s get you some recipe ideas.
I love oatmeal, but my husband loves grits, and even though he is from Texas, he puts SUGAR on his grits like a Yankee! Cream of Wheat is my go-to on cooler mornings which I gladly dollop on the butter and sugar and a sprinkling of cardamom, but a handful of fresh fruit can make this breakfast more Spring friendly. If cream of wheat isn’t your favorite and you prefer sweet grits like my husband, add some fresh berries or bananas to the top of this dish, with a drizzle of honey in place of the sugar.
Whether you like your oats hot or cold, a splash of milk, drizzle of honey and a scattering of berries makes this plain breakfast food burst with flavor. Some favorites? Bananas and peanut butter, chocolate chips and almonds (maybe even use chocolate almond milk to cook or soak the soaks), chopped apples and hemp seeds, or any of your other favorite, nut, seed, and fruit combos will make a perfect Spring breakfast. Just don’t forget to enjoy it on the patio with the warm sun on your face.
